Description
WILLS is a fantastic brewery in one of our favourite neighbourhoods of Montreal. They have built a reputation for brewing incredible Vermont inspired IPAs that lean into a more classic American east coast profile, balanced, expressive and endlessly drinkable. For our collaboration, we wanted to capture some of that inspiration while still making something unmistakably AMF. We started with our favourite lot of Citra for layers of saturated citrus, paired it with a beautifully pine forward lot of Simcoe, then rounded it out with New Zealand Cascade. We had talked about using classic Cascade, but it just wouldn't have felt like one of our beers without a little New Zealand flair. Pouring a light straw yellow with a cap of fluffy foam, this DIPA opens with aromas of bright citrus, ripe stone fruit and fresh pine. The palate is soft and full, delivering flavours of juicy orange, grapefruit, sweet pineapple and subtle resin, all wrapped together with a gentle floral character from the NZ Cascade. It finishes clean with a firm but balanced bitterness that keeps every sip dangerously drinkable.
